Hasta La Vista Spain

Hi lovies!

As I mentioned on Twitter, I spend some days in Spain with my friend Alina. It was very sunny but sometimes a bit windy on the beach. Most of the time we enjoyed the sun on the beach or the pool but did some shopping too. Last Saturday we went to Barcelona and came back with lots of beautiful things. In a next post I'll share my goodies with you! But for now, here are some impressions from our trip!

Banana and Pecan Waffles

Ingredients2 eggs, separated
1 1/2 cups milk
2 cups plain flour
1/2 teaspoon baking powder
1/4 cup sugar
2 ounces butter, melted (1/4 cup)
2 tablespoons cold water

DirectionsBeat egg whites until you get firm peaks. Beat egg yolks and milk lightly together.

Add sifted dry ingredients and beat until smooth.

Add melted, cooled butter and the water. Blend well. Fold in the firmly beaten egg whites.

Heat the waffle iron. Brush both top and bottom surfaces of waffle iron with a bit of oil. Spoon approximately 4 tablespoons of the waffle mixture into the center of the iron. Close the iron and cook until golden brown.

Note: For fruit waffles, add 1 tablespoon sugar and 1 teaspoon grated lemon rind to the sifted ingredients. Before adding egg whites, beat in 1 cup thinly sliced and chopped banana or 1/2 cup drained crushed pineapple or 1 cup of blueberries.

Chocolate dipped marshmallows

The idea for this sweet chocolate dipped marshmallows is from Melanie (Whimsical Creations).

Ingredients
  • marshmallows
  • melting chocolate
  • sprinkles
  • kebob skewers or lollipop sticks
Instructions
  • Put a stick into each marshmallow.
  • Dip them in melted chocolate.
  • Roll freshly dipped chocolate covered marshmallow in sprinkles (covering all chocolate).
  • Let chocolate dipped sticks cool on a cookie sheet lined with wax paper in the fridge until chocolate is firm.
I guess this is my new favourite recipe!

If you have a favourite recipe and you would like to share it with me, please send me an E-Mail (nissybunique@hotmail.com)! I would love to try it and maybe do a post about it.
